Grits — Southern Style

A Southern-style grits casserole that can be made the night before and baked the next morning.
Cook Time 45 minutes

Ingredients
  

  • 1 cup grits
  • 4 cup water
  • 1 stick butter or margarine 1/4 lb.
  • 2 eggs
  • 1 cup milk

Method
 

  1. 1. Cook as directed on grits box.
  2. 2. Then add 1 stick (1/4 lb.) butter or margarine. Stir constantly while melting process is going on.
  3. 3. Beat two eggs in a cup and fill with milk. Add to grits mixture.
  4. 4. Stir well and allow mixture to cook until it just begins to thicken.
  5. 5. Pour into greased casserole. Bake for 45 minutes at 350°.
  6. 6. The grits may be made the night before and put into the oven the next morning. In that case, bake the grits for about an hour. This allows for the coldness acquired in the refrigerator.

Notes

Can be prepared the night before and refrigerated. If baking from cold, increase baking time to about 1 hour.
