Santa Fe Potato Cakes

Ingredients
  

  • 3 cup cooked instant mashed potato flakes or leftover unbuttered mashed potatoes
  • 1 can diced green chilies 4 ounces, drained
  • 2/3 cup cornmeal divided
  • 3 green onions sliced
  • 1/3 cup shredded cheddar cheese about 1 1/2 ounces
  • 2 eggs beaten
  • 2 tbsp fresh cilantro chopped
  • 1 tsp chili powder
  • 1/2 tsp Lawry’s Seasoned Salt
  • 1/2 tsp Lawry’s Seasoned Pepper
  • 2 tbsp olive oil divided
  • salsa for serving
  • dairy sour cream for serving

Method
 

  1. 1. In large bowl, combine potatoes, chilies, 1/2 cup cornmeal, onions, cheese, eggs, cilantro, chili powder, Seasoned Salt and Seasoned Pepper; shape into eight patties.
  2. 2. Sprinkle both sides with remaining cornmeal; set aside.
  3. 3. In large nonstick skillet, heat 1 tablespoon oil over medium heat.
  4. 4. Add four patties; cook 5 to 7 minutes or until golden brown, turning once.
  5. 5. Remove from skillet; keep warm.
  6. 6. Repeat with remaining oil and patties.
  7. 7. Garnish as desired.

Notes

Serving Suggestion: Serve with salsa and sour cream.
