Caesar Salad (3)
You can make this famous salad your own thing and get yourself a reputation as a great salad showman. With the makings set up ahead, toss it dramatically and judiciously at the table, just like the captain does at one of your favorite fine restaurants.

Method
- 1. Combine olive oil and garlic; let stand overnight.
- 2. Toast bread cubes till golden (or fry bread cubes in 2 tablespoons garlic oil till crisp if you prefer).
- 3. Wash salad greens; dry on towel. Break into bite-size pieces and chill (you should have about 2 quarts).
- 4. To toss at table have everything else prepared. Put greens in large salad bowl with plenty of headroom for tossing.
- 5. Sprinkle with salad oil and 1/4 cup of the garlic oil. Toss by lifting greens with fork and spoon, then turning gently until greens are glistening.
- 6. Sprinkle with cheese; salt and pepper. Break egg on top; squeeze lemon juice over all. Toss until egg is blended completely.
- 7. Taste and adjust seasoning if needed. Toss croutons in rest of garlic oil; add to salad. Toss lightly and serve at once.
Notes
Fry bread cubes in 2 tablespoons garlic oil till crisp if you prefer.
