Caesar Salad (3)

You can make this famous salad your own thing and get yourself a reputation as a great salad showman. With the makings set up ahead, toss it dramatically and judiciously at the table, just like the captain does at one of your favorite fine restaurants.
Servings: 6

Ingredients
  

  • 6 tbsp olive oil
  • 1 clove garlic crushed
  • 1 cup French bread cubes
  • 2 large heads romaine
  • 1/4 cup salad oil
  • 1/2 cup grated Parmesan cheese
  • 3/4 tsp salt
  • freshly ground pepper
  • 1 raw egg
  • 1 large lemon or 3 tablespoons lemon juice

Method
 

  1. 1. Combine olive oil and garlic; let stand overnight.
  2. 2. Toast bread cubes till golden (or fry bread cubes in 2 tablespoons garlic oil till crisp if you prefer).
  3. 3. Wash salad greens; dry on towel. Break into bite-size pieces and chill (you should have about 2 quarts).
  4. 4. To toss at table have everything else prepared. Put greens in large salad bowl with plenty of headroom for tossing.
  5. 5. Sprinkle with salad oil and 1/4 cup of the garlic oil. Toss by lifting greens with fork and spoon, then turning gently until greens are glistening.
  6. 6. Sprinkle with cheese; salt and pepper. Break egg on top; squeeze lemon juice over all. Toss until egg is blended completely.
  7. 7. Taste and adjust seasoning if needed. Toss croutons in rest of garlic oil; add to salad. Toss lightly and serve at once.

Notes

Fry bread cubes in 2 tablespoons garlic oil till crisp if you prefer.
