Impossibly Easy Pumpkin-Pecan Pie

A truly delicious pie using Bisquick
Cook Time 40 minutes
Servings: 8

Ingredients
  

  • 1 cup canned pumpkin not pumpkin pie mix
  • 1 cup evaporated milk
  • 1/2 cup Original Bisquick
  • 1/2 cup sugar
  • 1 tbsp margarine or butter softened
  • 1 1/2 tsp pumpkin pie spice
  • 1 tsp vanilla
  • 2 eggs
  • 1/2 cup chopped pecans
  • Spiced Topping see below
  • 8 pecan halves if desired
  • 1 1/2 cup frozen whipped topping thawed, for Spiced Topping
  • 1/4 tsp pumpkin pie spice for Spiced Topping

Method
 

  1. 1. Heat oven to 350°. Grease pie plate, 9 x 1 1/4 inches.
  2. 2. Stir all ingredients except pecans and Spiced Topping until blended. Stir in chopped pecans. Pour into pie plate.
  3. 3. Bake 35 to 40 minutes or until knife inserted in center comes out clean. Cool completely, about 1 hour. Cut pie into slices. Garnish each serving with Spiced Topping and pecan. Store covered in refrigerator.
  4. 4. For Spiced Topping: Stir ingredients until smooth.
