Party Potatoes

A creamy baked potato casserole that’s better when refrigerated 24 hours before baking. Freezes well.
Cook Time 45 minutes
Servings: 10

Ingredients
  

  • 8-10 Maine potatoes
  • 1 cup dairy sour cream
  • 1 pkg cream cheese 8 oz
  • 1 tsp garlic salt
  • 1 tsp onion salt
  • butter
  • paprika

Method
 

  1. 1. Boil potatoes. Drain.
  2. 2. Beat sour cream and cream cheese until blended.
  3. 3. Add hot potatoes gradually, beating constantly until light and fluffy.
  4. 4. Season with garlic and onion salt.
  5. 5. Spoon potatoes into 2-quart casserole, dot with butter, sprinkle with paprika and brown.
  6. 6. Much better if they are refrigerated at least 24 hours before baking.
  7. 7. Then bake in 350° oven about 45 minutes.

Notes

This dish freezes well. Allow 1½ to 2 hours to bake when frozen.
